Preparation
- Bring a large pot of well-salted water to a rolling boil. Add the pasta and cook according to package directions until al dente.
- Reserve 1/2 to 1 cup of the starchy cooking water before draining the pasta.
Cooking the Sauce
- Warm a large skillet over medium heat and add the olive oil or butter. Once heated, add the minced garlic and sauté for 30–45 seconds until fragrant.
- Lower the heat and pour in the heavy cream. Stir to combine and let it simmer gently for about 1–2 minutes.
- Add Italian seasoning, salt, and black pepper. Gradually stir in grated Parmesan until melted and smooth.
- Add the drained pasta into the skillet and toss until thoroughly coated. Adjust with reserved pasta water for desired consistency.
Finishing Touches
- Fold in spinach off heat until just wilted. Taste and adjust seasoning as needed.
- Plate immediately, garnishing with extra Parmesan, parsley, and optional red pepper flakes if desired.
