Preparation
  1. Preheat your oven to 350 degrees F and grease a 9x13-inch baking dish with nonstick spray.
  2. In a large skillet over medium-high heat, add the ground beef and chopped onion. Cook until the beef is browned and cooked through, about 10 minutes.
  3. Add the minced garlic to the skillet and cook for an additional minute until fragrant.
  4. Stir in the tomato sauce and Italian seasoning. Let simmer for 5 minutes.
  5. Season with salt and pepper to taste, then remove from heat.
  6. Cook the egg noodles in salted boiling water according to package instructions. Drain and set aside.
  7. In a bowl, combine sour cream and cottage cheese. Stir until smooth and then add cooked egg noodles. Mix well.
Assembly
  1. Spread half of the egg noodle mixture into the baking dish.
  2. Top with half of the meat sauce, then repeat with remaining egg noodles and meat sauce.
  3. Sprinkle grated cheddar cheese evenly over the top.
